CZECH STYLE POTATO SALAD
I guess each country has a meal which is prepared for certain occasion. The recipe I am going to share with you is primarily cooked during Christmas, but as a potato salad lover I don't stick to this "rule".
You can eat the salad as a side dish and for ex. accompany it with roasted tempheh / tofu, any type of fake meat, and so on ... I personally prefer eating it as it is - the main and only dish :D
INGREDIENTS
500 g potatoes (with peel)
120 g carrot
75 g parsley
75 g celery root
1 apple
4 pickles
5 TBS of water from pickles
1 small onion
100 g green peas ( you can use frozen one)
vegan mayonnaise (about 250 ml)
big bowl for comfortable mixing
Before starting to make this recipe I recommend to boil the potatoes one day ahead for easier peeling. If you can't or don't want to do so, boil them earlier on the day of preparation so that they have time to cool down a bit.
Boil carrot, parsley and celery root for about 15-20 minutes, they should be soft but still keep their shape.
After boiling and peeling off the potatoes cut them into small cubes. Do the same with carrot, parsley, celery root, pickles, apple and onion and put them into your prepared bowl.
Now add all the remaining ingredients and mix well. I usually season the final product with black pepper and salt according to my taste so don't hesitate to do the same.
You can consume the salad on the same day, but if you let it rest overnight it's gonna taste better on the following day.
Hope you enjoy this recipe!
