MILLET CAKE RECIPE
In my opinion there is never enough dessert recipes, especially vegan, and gluten-free at the same time!
I prepare millet porridge few times a week for breakfast ... so why not to make a millet cake as well ^_^
This recipe doesn't require baking so it could be suitable for someone without oven (with a big refrig) or ... just anyone who wants to try out something new from millet (^_-)
This cake resembles the taste of autumn and it just matches the atmosphere of falling leaves and spectrum of earth tone colors so well. Since I kept the cake in refrig I suggest to warm it in microwave (if you are luckier than me and have one) before you eat it .. it's gonna taste much better.
But even tho this recipe matches "autumn - winter" seasons more, you can definitely transform it to summer as well by switching the filling ingredients etc.
Anyway let's get to the recipe.
Here is what you will need
For the cake crust
400 g millet
500 ml water
500 ml soy milk (you can use other kind)
40 g corn starch
4 TBS syrup (or about 16 dried dates) I used date paste
1-2 TS vanilla extract (depends on the strength of each extract) if you have, use vanilla bean
For the apple filling
6 small finely grated apples
1 CUP of irish moss (soaked for at least 8 hours, blended) or easier is to use 5 g of agar
10 TBS raisins
2 TS cinnamon
1 TS nutmeg
If you are using sour apples you can adjust it to your taste with sweetener
Start with boiling the millet together with water and soy milk. Boil until achieving a consistency of "thick porridge". If millet is not soft yet in this state, you will need to boil it for a bit longer (add more water/milk).
Once it's done mix in corn starch, sweetener of your choice and vanilla extract. Keep boiling for another 5 minutes, then put aside and let cool down.
Similar thing for the apple filling. Put everything except the irish moss into a pot and bring to a boil for about 5-10 minutes. Then add vegan gelatin of your choice and boil until it starts to thicken. Turn off the heat and let cool down.
Now the easiest part - put everything into the baking form. First put half of the millet mixture and spread evenly, then follows the apple filling, and then the rest of the millet mixture. You can decorate the top with cinnamon powder or nuts - I chose walnuts.
Put into a refrigerator and allow the cake to rest overnight if possible.
